Baked sweet potatoes with atchar and coconut cream
Ingredients
- As many orange sweet potatoes as required.
Directions
Preheat the oven to 180. Wash and dry potatoes, place in foil and sprinkle coarse sea salt and olive oil over and bake for half hour or until tender.
To a cup of coconut cream or milk, add 1 Tablespoon of atchar and mix well.
Pierce the cooked potatoes and top with a dollop of atchar cream and serve with fresh dhania for presentation.
