Curried dill potatoes

Ingredients

  • 1 and 1/2 kg potatoes
  • 2 cups trim (or other egg free mayonnaise)
  • 2 t curry powder
  • 1/2 t cayenne pepper
  • 2 t sugar
  • 1 T lime juice
  • 3 T dill picked off stalks
  • salt and pepper to taste

Directions

  1. Boil potatoes, and when cool, break into bite sized pieces ( helps the tastes enter the potato )

  2. Mix all the other ingredients together and add the potatoes to the mix

  3. Garnish with fresh dill leaves
