Polenta Pie

Ingredients

  • 1 cup polenta
  • 1 onion chopped
  • 1 T oil
  • 1 cup sliced brown mushrooms
  • half cup sliced sundried tomatoes
  • 1 t vegetable stock

Directions

  1. Bring 3 cups water to the boil

     

  2. add the polenta and simmer for a few minutes then add to a well greased quiche dish

  3. lightly fry the onion in oil until soft, add tomatoes and stock, salt and pepper

  4. add the onion mix to the polenta dish , stir well and place in a pre - heated oven (180 deg.) for about 45 -60 minutes

    Slice and serve with a mixed gren salad
