Polenta Pie
Ingredients
- 1 cup polenta
- 1 onion chopped
- 1 T oil
- 1 cup sliced brown mushrooms
- half cup sliced sundried tomatoes
- 1 t vegetable stock
Directions
Bring 3 cups water to the boil
add the polenta and simmer for a few minutes then add to a well greased quiche dish
lightly fry the onion in oil until soft, add tomatoes and stock, salt and pepper
add the onion mix to the polenta dish , stir well and place in a pre - heated oven (180 deg.) for about 45 -60 minutes
Slice and serve with a mixed gren salad
