Quinoa with ginger, apples, peas and coconut


  • 1/3 cup chopped almonds
  • 2 t vegetable oil
  • 1/2 cup chopped onion
  • 2 T minced ginger
  • 1 cup quinoa
  • 1 and 1/2 cups beetroot and carrot juice
  • 1 cup peas
  • 1 medium apple diced
  • 1/2 cup shredded coconut


  1. Lightly roast almonds in a dry heated pan and remove from pan

  2. Heat oil and fry onion

  3. Add ginger, fresh peas, quinoa and juice. Cover and simmer for about 15-20 minutes until all the liquid is absorbed.

  4. Remove from heat and cool. Add the coconut and almonds, toss well and serve at room temperature or hot.
