Roasted butternut with masala

Ingredients

  • 1 large butternut, sliced into rings with skin on
  • 1 T peanut oil
  • 3 cloves crushed garlic
  • 1/4 cup chopped fresh coriander
  • 1/4 t herbal salt
  • 2 ml fructose or jaggery or sugar
  • pinch of ground leaf masala
  • pinch of ground garam masala
  • fresh coriander for garnish

Directions

  1. Pre heat the oven to 180 deg.

  2. Mix all the ingredients in a bowl, cover the butternut with the mix

  3. Place the rings on a baking tray and roast until golden and crispy turning over half way through, then arrange in a serving dish and sprinkle on the garnish
