Spinach, mushroom and leek phyllo bake

- 3 chopped Onions
- 2 bunches Leeks
- 1 punnet Brown Mushrooms
- 2 packets chopped Spinach
- Olive oil and coconut oil for frying
- Phyllo pastry sheets
- Feta or vegan cheese
Fry the onions, leeks, brown mushrooms and chopped spinach together in olive oil and a little coconut oil.
In a lasagne dish layer 2 sheets phyllo pastry, and top it with a layer of the vegetable mixture.
Sprinkle with feta or vegan cheese, and continue so on in layers until the vegetable mixture is finished.
End with phyllo layer and cut into squares before baking.
Bake until golden-brown.
